Hazelnut winter pesto with canestri (new!)
No place in Italy is quite so synonymous with nocciole, or hazelnuts, as the region of Piemonte. All across the country, and indeed the wider gastronomic world, Piemonte is highly regarded for its expansive hazelnut groves of its Langhe hills. The ‘Nocciola del Piemonte IGP’, or prized hazelnut crop from the region, is distinguished by its rich, creamy taste and beautiful winter brown colour.
In recognition of Piemonte’s rich heritage as a hazelnut producer, and to mark our celebration of this historic region’s wintertime traditions, our chefs created this limited edition hazelnut ‘pesto’. We say ‘pesto’ with inverted commas because it’s not like any pesto you’ll have tried before – indeed, it’s closer in texture and taste to neighbouring Liguria’s sugo di noci, or walnut sauce, prepared with nuts, yes, but also milk and bread. Our hazelnut sauce is also suffused with festive spices to provide an altogether new take on pesto. In terms of the fresh pasta component, we’ve paired this limited edition Piemonte-inspired sauce with our dinky canestri ‘baskets’ which merrily scoop up the sauce.Â
Note: Please consume or freeze our pasta and sauces within 2 days of delivery.
METHOD
- Bring a large saucepan of water to the boil. Salt the water (around ½tbsp per litre).
- Cook the pasta in the boiling water for around 2minutes. Stir regularly to prevent sticking.
- Once cooked, drain and save 2 tbsp (30ml) of boiling pasta water.
- Put the pesto sauce in a large bowl. Take care to ensure all sauce is squeezed from the pouch. Add the 2tbsp (30ml) of the boiling  cooking water to the pesto and mix together.
- Transfer the pasta to the pesto. Toss gently to coat.
- Sprinkle the cheese on top.
- Serve immediately. Buon appetito!
