Sea bass ravioli with tomato & basil sauce, samphire
Seafood plays a pivotal role in the cuisine of Italy, especially in its coastal regions. Indeed, the inspiration for this dish comes from the town of Praiano, which clings to the cliffside along the Amalfi Coast and looks out onto pastel blue waters. In Praiano, sea bass is often the catch of the day at the town’s trattorie, with guests enjoying the fresh fish with a cold glass of white wine.
In homage to this evocative seaside scene, our chefs have this week prepared filled pasta with sea bass. It’s designed to spirit you away to warmer and more peaceful climes. It’s also worth mentioning that sea bass is full of healthy omega-3 fatty acids and is naturally low in calories, making this dish a salubrious choice. We pair our sea bass-filled pasta with a tomato sauce and samphire: this reminds us of happy, languorous times spent by the seaside in Italy, and we hope this dish will take you there too – if only for a moment.Â

METHOD
- Bring a large saucepan of water up to the boil. Salt the water (around ½tbsp per litre).
- Cook the pasta in the boiling water for 2-2½ minutes (our fresh pasta is delicate so please make sure the water is only gently simmering!). Stir gently to prevent sticking.
- Whilst the pasta cooks, put the sauce and samphire in a pan and add 2 tbsp (30ml) of the boiling pasta cooking water. Take care to ensure you squeeze all the sauce from the pouch. Gently heat until steaming and then turn off the heat.
- Lift the pasta out of the water and transfer to the sauce. Toss gently to coat.
Serve immediately. Buon appetito!
