Pumpkin and amaretti ravioli with tomato & basil sauce

In northern Italian cuisine, and most notably in the region of Lombardy, pumpkin (‘zucca’ in the vernacular) has long been paired with amaretti, the beautiful bittersweet biscuits from the small city of Saranno. If you haven’t tried them before, amaretti are redolent of almonds but also apricots. And whilst to non-natives this might sound a strange flavour profile to serve with pumpkin, we give full assurance that it is a consummate pairing. 

Our pumpkin and amaretti ‘ripieno’ (filling) is heartily stuffed into our freshly made ravioli, which are a lingot-shaped ravioli, long and rectangular. This comforting filled pasta is served with a tomato sauce, whose delicateness complements, rather than interferes with, the sweet and fragrant profile of the pumpkin and amaretti filling. 

Note: Please consume or freeze our pasta and sauces within 2 days of delivery.

METHOD

  1. Bring a large saucepan of water up to the boil. Salt the water (around ½tbsp per litre).
  2. Cook the pasta in the boiling water for 2-2½ minutes (our fresh pasta is delicate so please make sure the water is only gently simmering!).  Stir gently to separate any pieces that may have got stuck together.
  3. Whilst the pasta cooks, put the sauce in a pan and add 2 tbsp (30ml) of the boiling pasta cooking water. Take care to ensure you squeeze all the sauce from the pouch. Gently heat until steaming and then turn off the heat.
  4. Lift the pasta out of the water and transfer to the sauce. Toss gently to coat.
    Serve immediately. Buon appetito!
