Crab & chilli ravioli with tomato sauce, samphire
Those lucky enough to have driven along the Italian coastline will be familiar with the small, family-run restaurants that appear on the horizon. As one draws closer, one cannot help but marvel at how beautiful their pale blue facades look against the sun: a sort of seaside fairy tale. But it’s the waft of fresh seafood cooking in the kitchens of these little, family-run establishments that is most captivating. With the most beautiful crab & seafood, these little coastline eating spots typically source freshly-caught seafood directly from nearby fishermen in the morning, giving them time to prepare the catch and create simple but sublime dishes in time for hungry drivers to feast upon as lunchtime arrives.
In this dish, we’ve looked to this wonderfully idyllic scene for inspiration, filling our pasta with crab and chilli. We serve with a tomato sauce and samphire, known poetically in Italian as ‘asparagus of the sea’.Â
Note: Please consume or freeze our pasta and sauces within 2 days of delivery.
METHOD
- Bring a large saucepan of water up to the boil. Salt the water (around ½tbsp per litre).
- Cook the pasta in the boiling water for 2-2½ minutes (our fresh pasta is delicate so please make sure the water is only gently simmering!). Stir gently to separate any pieces that may have got stuck together.
- Whilst the pasta cooks, put the sauce and samphire in a pan and add 2 tbsp (30ml) of the hot pasta cooking water. Take care to ensure you squeeze all the sauce from the pouch. Gently heat until steaming and then turn off the heat.
- Lift the pasta out of the water and transfer to the sauce. Toss gently to coat.
- Serve immediately. Buon appetito! minutes. Stir regularly to prevent sticking.
STORAGE: Like all fresh products, our artisan pasta has a limited shelf life. Keep chilled & consumed by the date indicated. FREEZING: Alternatively freeze the pasta before use by date. The pasta can be cooked frozen for 3 minutes. The sauce should be defrosted in the fridge overnight before cooking.
